These Smoked Jalapeño Poppers are a mouthwatering combination of smoky, creamy, and savory flavors, perfect for finger food perfection. Grilled over a charcoal BBQ, these poppers are stuffed with a creamy blend of cheeses, wrapped in crispy bacon, and dusted with a hint of BBQ rub for that extra kick. Whether you’re hosting a backyard gathering or cheering on your favorite team, these irresistible bites will be the MVP of your spread.
1. Prep the jalapenos by slicing them in half lengthwise.
2. With a spoon, scoop out the ribs and seeds.
3. In a small bowl, mix together the cream cheese and cheddar cheese.
4. Add the cream cheese mixture to the jalapeno halves.
5. Sprinkle the filled jalapenos with your favorite BBQ rub, (I recommend Meat Church's Fajita rub) and top with freshly grated parmesan cheese.
6. Slice the bacon strips in half lengthwise and wrap the bacon strip around the popper.
7. Ready the barbecue for indirect low heat (200-250°F). Once at temperature, add wood chunks to the coals. I recommend a combination of apple and cherry.
9. Place the poppers on the grill, lower the lid, and smoke for approximately 30 minutes.
10. Remove and serve!
