Whole Pork Shoulder (cubed in big chunks, 1.5 - 2") 1 (about 4-6 lbs)
Bottle of North Carolina BBQ Sauce (such as Scott's Sauce, or homemade) 1 bottle
Cayenne 1 T
Black Pepper 1 T
Kosher Salt 1 T
Mild Paprika (optional, not smoked - adds color) 1/2 T
Apple Cider Vinegar 1.5 Cups

Steps

There’s nothing quite like a warm, hearty meal to chase away the chill on a cold night, and this Cozy Carolina Pork is the ultimate comfort food. Cooked to perfection in the Cowboy Cauldron with the Chuckwagon Pot, this recipe combines tender pork, savory seasonings, and all the flavors of home-cooked goodness. Whether you’re hosting a family gathering or simply treating yourself to a quiet evening by the fire, this dish is a rustic, soul-soothing classic that pairs perfectly with chilly nights and cozy vibes.  

Let’s get this started:

  1. Roughly cube meat into big chunks and more finely dice some of the fat.
  2. Place your Chuckwagon Pot over the fire from S-hooks and allow to adequately heat up.
  3. Add diced fat to the pot and let render briefly, about 1-2 minutes.
  4. Add some of the cubed pork and let brown. It should not be grey, it should be brown!
  5. Add remaining pork, in batches, if necessary, and let stir until it is all sufficiently brown.
  6. Mix your cayenne, pepper, salt and apple cider vinegar together in a bowl, whisk vigorously.
  7. Add the liquid mixture to the pork and cover the pot with the lid.
  8. Let cook for 25-30 minutes. Stir occasionally. 
  9. The liquid should reduce by close to half. Add more sauce or vinegar periodically, if desired.
  10. Once the pork is tender, remove the pot from the cauldron and serve immediately.
