All-purpose flour, sifted 1 cup
Salt 1/2 teaspoon
Sugar 1 tablespoon
Large eggs, room temperature 2
Milk, warmed 1 cup
Unsalted butter, melted 3 tablespoons
Ghee for cooking As needed
Honey roasted pistachios to garnish As needed
Cocoa powder (optional, for chocolate crepes only) 2 tablespoons
For Cannoli Dip
Whole milk ricotta cheese, drained 15 ounces
Mascarpone cheese 8 ounces
Vanilla extract 2 teaspoons
Powdered sugar 1/2 cup
Cinnamon 1 teaspoon
Salt 1/4 teaspoon
Mini chocolate chips 1/2 cup, plus extra for garnish

Today, I'm so excited to share a holiday tradition from my family that's always a crowd-pleaser: Cannoli Crêpes on the Blackstone Griddle! If you’re looking for something deliciously different to add to your holiday spread, this is it.🎄✨

Making these crêpes on the Blackstone is not only super fun but also perfect for large groups. The beauty of crêpes is that they’re so versatile! This has been a staple in our family holiday celebrations for years, and I can't wait for you to try it! So prep your griddle, turn on that Christmas music, and let’s get cooking! 🎅💫

Let's Get This Started: 

1. In a large mixing bowl, combine all the Cannoli Dip ingredients and set it in the refrigerator until ready to use.

2. In a separate large mixing bowl, sift the flour, then add all remaining crêpe ingredients (except the ghee and honey roasted pistachios) and whisk until you get a smooth and thin batter. 

PRO TIP: For chocolate crêpes, add 2 tablespoons of cocoa powder to the batter!

3. Heat ghee on medium-low heat on the griddle surface until it melts. Add between 1/2 and 1/2 cup of batter to the griddle and immediately spread it using a crêpe spreader, creating a thin circular crêpe. 

4. Cook the crêpe for 1.5 minutes per side using a crêpe spatula to flip it. 

5. Remove the cooked crêpe and keep it warm under a clean kitchen towel until all are made.

6. To serve, fill the crêpes with the cannoli filling and garnish with chocolate chips and honey roasted pistachios.
