Preheat your BBQ to 350°F, lighting all burners to low. You can use indirect heat, but keeping heat under the cast iron gives the best results. If it gets too hot, turn off the outside burners.
In a heatproof bowl over simmering water, dissolve the espresso powder, then add butter, semi-sweet chocolate, and dark chocolate. Stir until smooth, then remove from heat and let cool to room temperature.
While the chocolate cools, sift together the sugar, flour, and salt. Once cooled, whisk the eggs and vanilla into the chocolate mixture, then fold in the dry ingredients and any desired mix-ins.
Pour the batter into a greased cast iron frying pan. Place the pan on the BBQ and bake for 30–35 minutes, until the center is just set.
Remove from the heat and allow to cool slightly before serving. Enjoy warm with ice cream, nuts, or whipped cream.
