Take your chicken wings and pat em dry. If you're using whole wings, break them down into flats and drums for more even cooking.
Season the wings generously with Chuds Snakebite.
Place the wings on a wire rack. This helps with air circulation and crispiness. Set the rack on the upper shelf of your pellet grill.
With the wings loaded onto the grill, turn it on and set the temperature to 400°F. Let the grill come up to temp with the wings already inside.
Check the wings after about 20 to 30 minutes. Flip them to ensure even cooking.
Close the lid and cook for another 20 to 30 minutes. Spray the wings with Duck Fat to help them crisp up, and continue cooking.
At this point you can either take your hot sauce spray bottle and spray them while they’re still on the grill. Let the sauce tack up for a couple minutes, flip the wings, and spray again. Cook for a few more minutes to finish.
