Preheat your grill. If using charcoal, try Blues Hog Premium Charcoal Briquettes for long-lasting heat and great flavour.
Shape the ground beef into 8 large patties. Cut the colby jack slices into quarters and place your desired amount of cheese on 4 patties. Top each with another patty and pinch the edges to fully encase the cheese, shaping into 4 stuffed burgers.
Generously season the patties with Bold & Beefy Seasoning and grill over direct heat. Flip once, season the other side, and cook to your desired doneness.
While the burgers cook, lay bacon on a sheet pan, sprinkle with brown sugar, and cook alongside the burgers on the grill or in a 400°F oven for 20 minutes.
Transfer burgers to a pan, coat them in Raspberry Chipotle Barbecue Sauce, and let them sit for 5–10 minutes to form a tacky glaze. Watch carefully to avoid burning.
Butter all sides of the buns and toast them over direct heat for 2–3 minutes, watching closely to prevent burning.
Place each burger on the bottom bun and top with candied bacon, lettuce, tomato, pickles, and mayo. Serve hot and enjoy!
