Smoked Sloppy Joe Stuffed Peppers

Stuffed Bell Peppers are a classic weeknight meal. Homemade sloppy joes are easy to make are delicious, and take the flavor of this classic dish to a whole new level. This stuffed peppers recipe would also be a great use for all that wild game ground meat that you have in your freezer.

Instructions

Step 1

Preheat your grill to 400°F. Let your cast iron dish warm up with the barbecue. Then add your onion and ground beef and sauté until your beef if browned and your onions are translucent.

Step 2

Add all your sauce ingredients, mix thoroughly, and let simmer for 7-10 minutes.

Step 3

Add your prepared rice. Remove from the barbecue but keep your grill on.

Step 4

Cut the tops of bell peppers off and remove the core and any seeds with a spoon. **Pro tip** Get the 4 bump bottom peppers as they balance better standing up!

Step 5

Stuff the sloppy joe mixture into your stuffed peppers. You can top your stuffed bell peppers with marble cheese if you please!

Step 6

Using the same cast iron, add 1/2 cup of water and place the sloppy joe stuffed peppers back into the pan. Smoke for 20-30 minutes, or until your peppers become somewhat soft.
