Spooky Fall Flavours: Pork Candy Bites

Sweet, smoky, and devilishly addictive, these Pork Candy Bites are the ultimate Halloween BBQ treat. Slow-roasted pork belly cubes are glazed in sticky sauce and caramelized over charcoal for a flavour that’s hauntingly good.

Instructions

Step 1

Pre-heat your barbecue to 250°F.

Step 2

Remove the skin from the pork belly but leave all of the fat in place. Cut pork belly into 1 inch cubes. Rub thoroughly with BBQ rub. Place the cubes into a roasting basket fat side up, and onto your preheated barbecue. Roast for 2.5 hour and make sure NOT to stir!

Step 3

Turn the heat up to 275°F on your barbecue. Combine the sauce ingredients in a foil tray and place on the grill next to your roasting basket to warm and reduce the sauce.

Step 4

At the 3 hour mark, mix the pork belly into the sauce thoroughly. Roast for an additional 2 hours, stir after 1 hour.

Step 5

Remove and separate the sauce and the pork belly. Pour the sauce into a pan or pot and reduce the volume by half or until it is thick and sticky.

Step 6

Turn your barbecue heat up to 400°F. Brush the pork belly with the reduced sauce and return the pan to the BBQ.

Step 7

Bake the sauce onto the pork belly for 20 minutes. Remove and serve.
